Haitian food is elite, our secret weapon is the épis, a mixture of herbs and spices that goes pretty much in everything from seasoning meats to our kinds of rice and soups.
My late grandmother taught me how to cook, she was a cordon bleu, she worked for years at the National Haitian Palace kitchen and then she also worked for American Airlines back then the meals were made fresh in Haiti and then served on the plane.
Her face lighted up, every every time she would describe how many accolades she and the other coworkers received from dignitaries. Her signature dish is “ Pate Pintade”.
Every year around January, my father would pay my grandmother a special visit, a request for her to cook a tray of her famous dish. The Pate was always the highlight of my father’s birthday party.
The dishes mentioned below are meals my grandmother Lucie cooks regularly and remains my all-time favorite.

Diri Jon ak peti pwa sos poul Peyi salad a la Boulanger
Yellow Rice and green peas and hard chicken sauce and noodles and potatoes salad
This is the Sunday meal, a delicacy, the Birthday or celebration meal. This recipe brings so much joy and memories of my family.

Sos fwa ak viv salad vet zakoka
Liver sauce served with plantain or sweet potato’s and green and avocado salad
This dish is served as breakfast, yes a robust morning meal, a delicacy of Haitian cuisine.

Pwason, lambi, homard boukanen ak banan pèse pikliz
Grilled seafood served with fried plantain and pikliz
My grandmother grilled seafood is chef Michelin star worthy, an explosion of spice and fresh seafood.

Chokola Peyi ak Pen
Hot chocolate served with bread
Best hot chocolate globally, I have tried many hot chocolate amd my the Haitian foskaro stays and remains undefeated.

Mayi Moulu ak Fey sos haranso ak zaboka
Cornmeal with spinach and herring sauce and avocado
Also served as breakfast, this dish is so nostalgically delicious to me, healthy nutritious meal to start a day.
